Hi Nathalie,
I'm glad you like the recipe! Yes, I would say you can definitely make the onions ahead of time and store them in an airtight container or even a ziplock bag. I also think it would be fine to make the casserole and freeze it (without the onions). Then, just take it out of the freezer and allow it to fully thaw before baking. I haven't done this myself but I think it would work fine!

I really like this recipe, I plan on making it for a client of mine who will be getting surgery soon. Do you have any suggestions as to what can be made ahead of time?
